The food pan warmer and cooler is one cabinet doing two jobs: keeping hot pans hot on a service line, and keeping chilled pans cold on a delivery route. It is a passive unit, so the same 90 litre box works in both directions without a switch, a heating element or a compressor. Pre-heat the cavity with hot water for ten minutes and it holds hot food above 60 C for four to six hours; pre-chill it with ice or in a cold room and it holds chilled product below 5 C for the same
