The design argument for a front-loading insulated food carrier is ergonomic, and at 120 litres it becomes an occupational health argument as well. Eight full-size GN pans loaded from above into an 800 mm tall cabinet would mean lifting roughly 70 kg of food to head height, pan by pan, several times a shift.
