It is fully passive: pre-heat the cavity with hot water and the 30 litre space holds food above 60 C for four to six hours; pre-chill it with ice or in a cold room and the same cavity holds product below 5 C for the same period. There is no heating element, no compressor, no switch and no cable, so the unit cannot fail on site
